test: enable LWIP_CHECKSUM_ON_COPY and TCP_CHECKSUM_ON_COPY_SANITY_CHECK

To find and verify bug #50914 (TCP_CHECKSUM_ON_COPY when adding data to
retransmission), enable checksum-on-copy for the unit tests.
